Sub in other vegetables if you have them on-hand and try using lean ground pork in place of the turkey. Garnish with toasted sesame seeds, if desired.

Ingredients

Canola oil

2 tsp

Red bell pepper

1 medium, diced

Carrots

1 medium, diced

Garlic

2 clove(s), minced

Minced ginger

1 Tbsp

Uncooked ground turkey breast

1 pound(s)

Scallions

4 medium, thinly sliced

Frozen green peas

1 cup(s), thawed

Soy sauce

2 Tbsp

Dark sesame oil

2 tsp

Table salt

¼ tsp

Red pepper flakes

Cooked white rice

2 cup(s), hot

Cilantro

¼ cup(s), chopped

Instructions

  1. Heat canola oil in large skillet over medium-high heat. Add bell pepper and carrot and cook, stirring often, until softened, about 3 minutes. Add garlic and ginger and cook, stirring constantly, until fragrant, 30 seconds. Add turkey and cook, stirring often, until no longer pink, about 5 minutes. Add scallions and cook, stirring often, until scallions are softened, about 1 minute.
  2. Stir in peas, soy sauce, sesame oil, salt, and pepper flakes and cook just until heated through, about 2 minutes. Remove from heat and stir in cilantro. Divide rice evenly among 4 bowls; top evenly with turkey mixture. Sprinkle with sesame seeds.
  3. Serving size: 1 1⁄2 cups turkey stir-fry and 1/2 cup rice
