These flavorful peas are perfect accompaniment to dinner on a hot summer evening. The sweetness of the sugar snaps gets additional crunch and a little Asian flair from the sesame seeds and ginger. Served cold, these make a great appetizers as well since the texture of the peas is crunchy even when cooked. Try this treatment with other vegetables such as carrot coins or broccoli for more side options. With only 4 ingredients and less that 20 minutes to prepare, this dish is a go-to weeknight win!

Ingredients

Sugar snap peas

1 pound(s)

Sesame oil

1 tsp

Sesame seeds

1 Tbsp

Ground ginger

½ tsp

Instructions

  1. Steam snap peas until crisp-tender, about 10 minutes.
  2. Coat a large nonstick skillet with cooking spray. Add oil and heat over medium-high heat. Add sesame seeds and ginger; stir-fry for 1 minute.
  3. Add snap peas and stir-fry until warmed through, about 2 minutes. Yields about 1/2 cup per serving.

Notes

We kept the calories and fat down by steaming the peas first and then stir-frying them in a touch of oil.
