Sesame sugar snap peas

These flavorful peas are perfect accompaniment to dinner on a hot summer evening. The sweetness of the sugar snaps gets additional crunch and a little Asian flair from the sesame seeds and ginger. Served cold, these make a great appetizers as well since the texture of the peas is crunchy even when cooked. Uncooked sugar snap peas
- Steam snap peas until crisp-tender, about 10 minutes.
- Coat a large nonstick skillet with cooking spray. Add oil and heat over medium-high heat. Add sesame seeds and ginger; stir-fry for 1 minute.
- Add snap peas and stir-fry until warmed through, about 2 minutes. Yields about 1/2 cup per serving.
We kept the calories and fat down by steaming the peas first and then stir-frying them in a touch of oil.
