This teriyaki-style mixture goes well with mild, meaty fish such as tuna, swordfish or mahimahi. And it complements salmon`s buttery richness.

sherry (dry or sweet)1 tsp
unsweetened orange juice¼ cup(s)
orange zest1 Tbsp
unpacked brown sugar2 tsp

- Mix together ingredients. Place fish in a nonmetallic dish and pour marinade over it.
- Marinate fish for at least 20 minutes or up to 1 hour. If desired, brush with leftover marinade (boiled for 3 to 5 minutes to destroy bacteria) while cooking.
