This refreshing salad gets a unique crunch from sweet, crisp jicama and delightful root vegetable from South America that's notable for taking on great flavor from dressings while maintaining its texture beautifully. Paired with the carrot and snow peas, this salad is a super win to start a meal or to be topped with grilled chicken or shrimp. The sesame-soy dressing is slightly sweet to please kids and adults alike making it a great option for a quick side dish any day of the week. If you're not a jicama fan, use sliced, canned water chestnuts instead.

Ingredients

Jicama

¼ medium, peeled and cut into matchsticks (about 1 cup)

Snow peas

1 cup(s), whole, cut into thin strips

Carrots

2 medium, shredded

Romaine lettuce

1 cup(s), shredded, coarsely shredded

Red wine vinegar

3 Tbsp

Less sodium soy sauce

2 Tbsp

Mineral water

2 Tbsp

Honey

4 tsp

Toasted sesame oil

¼ tsp

Sesame seeds

1 tsp

Instructions

  1. In a salad bowl, combine jicama, snow peas, carrots and lettuce; toss gently.
  2. In a cup, stir together vinegar, soy sauce, water, honey and sesame oil. Pour over salad; toss and sprinkle with sesame seeds. Yields about 1 cup per serving.
