Busy families are always looking for versatile sides and this one delivers big time. A mix of different cabbages makes an attractive, tasty dish that can stand on its own as a salad, serve as a side dish to roasted chicken or pork, or be the base of a cool and crunchy dinner salad topped with grilled shrimp or chicken. The fresh cabbage is hearty enough to hold up to the ginger honey dressing without wilting immediately making it a great recipe for entertaining meals. Keep some of the dressing on-hand for a quick add of flavor to grilled salmon fillets as well.

Ingredients

Less sodium soy sauce

1½ Tbsp

Fresh ginger

1 tsp, finely grated

Honey

2 tsp

Sesame oil

1½ tsp

Apple cider vinegar

2 tsp

Cooked green cabbage

1½ cup(s), shredded, thinly sliced

Red cabbage

1 cup(s), thinly sliced

Carrots

1 cup(s), peeled and grated

Raisins

3 Tbsp

Scallions

2 medium, white and light-green parts chopped

Instructions

  1. In a small bowl, whisk together soy sauce, ginger, honey, sesame oil and vinegar for dressing. Set aside at room temperature.
  2. Combine remaining ingredients and toss until well mixed. About 15 minutes before serving, pour dressing over salad and stir to combine. Set aside and stir occasionally. Yields about 1 packed cup per serving.
