This Mexican-inspired tostada is so fast and tasty you will never skip breakfast again. Perfect for one but easy enough for more, the crispy tortilla makes a great base for the scrambled eggs, zesty guacamole, salsa, cilantro and salty fresh queso fresco. If cilantro is soapy to you, omit it or substitute parsley. Try salsa verde in place of traditional salsa for an easy variation. Need this to be portable, toast the tortilla less and make it into an easy taco. Kids will love this breakfast and it's ready in only 12 minutes so you will love it too!

  1. Scramble eggs in a nonstick skillet using cooking spray (using salt and pepper, if desired).
  2. Top tortilla with scrambled eggs; season with salt and pepper (optional). Top with salsa, guacamole and queso fresco; sprinkle with cilantro.
