The last minute party just got a whole lot easier and much more tasty! This scallop recipe, ready in about 15 minutes, feeds a crowd as a main dish and even more as an appetizer. Try serving each scallop with some salsa in a wonton soup spoon or placed in an endive leaf for a pretty presentation. If you are having this for dinner, serve over some coconut rice with a dash of lime zest or over some mixed greens with cool and crisp cucumber and red onion slivers to capture some sweetness from the mango as dressing.
