Try serving each scallop with some salsa in a wonton soup spoon like we did or placed in an endive leaf for a pretty presentation. If you are having this for dinner, serve over some coconut rice with a dash of lime zest or over some mixed greens with cool and crisp cucumber and red onion slivers to capture some sweetness from the mango as dressing.

Mango

1 medium, ripe, peeled and finely diced

Bell pepper

1 item(s), small, red variety, finely diced

Chives

2 Tbsp, finely chopped

Cilantro

2 Tbsp, finely chopped

Fresh lime juice

2 Tbsp, plus lime wedges for serving

Table salt

¼ tsp, coarsely ground

Uncooked scallops

1 pound(s), sea scallops (about 24)

Instructions

  1. Combine mango, bell pepper, chives, cilantro, lime juice, and pinch of salt in small bowl and stir to combine.
  2. Sprinkle scallops with remaining 1/2 teaspoon salt and black pepper. Spray ridged grill pan with nonstick spray and set over medium-high heat. Add scallops and cook, turning once, just until opaque in center, about 2 minutes. Serve with salsa.
  3. Serving size: 4 scallops and 1/4 cup salsa
