Sautéed Spinach with Crispy Garlic

Ingredients

Olive oil

1 Tbsp

Garlic

4 clove(s), thinly sliced lengthwise

Baby spinach

2 pound(s)

Table salt

½ tsp

Red pepper flakes

Heat oil in large nonstick skillet over medium heat. Add garlic and cook, tossing occasionally, until light golden, about 21⁄2 minutes. With slotted spoon, transfer garlic to plate.

Add spinach to skillet in batches, and cook, tossing with tongs, until spinach wilts, about 2 minutes per batch, transferring each batch to serving bowl.

Return spinach to skillet (discard any liquid in bowl) and sprinkle with salt and pepper flakes; toss until mixed well. Return spinach to bowl; sprinkle with garlic and toss.
