Sautéed veggies with lupin by Carrington Farms

The addition of cooked ground lupin beans gives this vegetable saute a protein lift. Serve it alongside your favorite roasted, grilled, or baked proteins, or top it with a poached egg.


Ingredients
Carrington Farms Plain ground lupin bean, dry
½ cup(s)
Coconut oil
2 tsp
Garlic clove
1 clove(s), minced
Spinach
2 cup(s)
Mushrooms
5 oz, chopped
Cherry tomatoes
¼ cup(s), chopped
Table salt
1 pinch(es), or to taste
Black pepper
1 pinch(es), or to taste
Dried oregano
1 pinch(es), or to taste
Instructions

In a medium saucepan, bring 1 ½ quarts of water to a boil. Stir in ground lupin and an optional pinch of salt; boil 3 minutes. Strain; set aside.

Set a large skillet over medium heat. When hot, add oil, garlic, spinach, mushrooms, and tomatoes. Cook, stirring frequently, until spinach wilts and mushrooms are lightly browned, 3 to 5 minutes.

Stir reserved lupin into vegetables. Season to taste with salt, pepper, and oregano; stir again.
