We load on the veggies, inverting the usual ratio of pasta to veggies to keep Points down. Hold off on seasoning until the very end; you may find that the sausage and cheese provide plenty of savory flavor.

Ingredients

Uncooked penne pasta

1 oz, or cavatappi

Olive oil

1 tsp

Yellow bell pepper

1 medium, sliced

Sweet onion

½ medium, sliced

Cooked chicken sausage

3 oz, sliced

Grape tomatoes

½ cup(s), halved

Garlic

1 clove(s), minced

Grated Parmesan cheese

½ Tbsp

Instructions

  1. Cook the pasta according to the package directions. Scoop out and reserve ¼ cup pasta cooking water, then drain pasta.
  2. Meanwhile, heat the oil in a medium nonstick skillet over medium-high. Add the bell pepper, onion, and sausage to the pan; sauté 3 minutes, stirring occasionally. Add the tomatoes and garlic; sauté until the tomatoes soften, 3 to 5 minutes, stirring occasionally. Stir in the pasta and the reserved ¼ cup pasta water; cook for 2 minutes, stirring frequently. Sprinkle the cheese on top.
  3. Serving size: about 2 cups

Notes

Corkscrew- or tube-shaped pasta will take up more physical space, giving you the perception that there’s more pasta than is actually there.
