Ingredients

uncooked cauliflower

1 head(s), small, small, cut into small florets

olive oil

2 tsp

ground cumin

½ tsp

table salt

½ tsp

black pepper

¼ tsp

lemon(s)

½ medium, grated and juiced

garlic clove(s)

1 medium clove(s), minced

Instructions

  1. Preheat oven to 450°F.
  2. Put cauliflower on large rimmed baking sheet. Drizzle with oil and sprinkle with cumin, salt, and pepper. Toss until coated evenly; spread to form even layer.
  3. Roast 15 minutes, stirring once. Sprinkle cauliflower with lemon zest and juice and garlic, tossing to coat. Roast until cauliflower is tender, about 3 minutes longer.
  4. Per serving: 1 cup
