Grated lemon zest gives almost any dish a fresh pop of citrus flavor.

Ingredients

Cooking spray

Asparagus

1 pound(s), trimmed

Red bell pepper

1 large, cut into 1/2-inch strips

Lemon zest

1 tsp

Fresh lemon juice

1 Tbsp

Extra virgin olive oil

2 tsp

Table salt

½ tsp

Crushed red pepper flakes

¼ tsp

Dill

1 Tbsp, chopped

Instructions

  1. Preheat oven to 425°F. Spray large rimmed baking sheet with cooking spray.
  2. Place asparagus and bell pepper on baking sheet and lightly spray with cooking spray. Toss to coat. Arrange vegetables in single layer on baking sheet. Bake until crisp-tender, shaking pan occasionally, about 10 minutes for asparagus and about 15 minutes for bell pepper.
  3. Meanwhile, to make dressing, stir together lemon zest and juice, oil, salt, and pepper flakes in small bowl.
  4. Place asparagus on platter; top with bell pepper. Drizzle with dressing and sprinkle with dill. Serve warm or at room temperature.
  5. Serving size: scant 2/3 cup
