Peppery arugula and hot horseradish give this sandwich recipe great bite. It’s so much more than your average roast beef sandwich, and it takes just 10 minutes to make. If arugula isn't your favorite, you can use spinach, romaine, or iceberg lettuce instead. Also, plum tomatoes are a good choice for this sandwich because they are less juicy than other tomatoes and won't make the bread too soggy. We love the flavor combination of mayonnaise, horseradish, and a touch of black pepper, which really ties all of the ingredients together. Just be sure not to forget to serve a couple of pickles alongside!

Instructions

In small cup, stir mayonnaise, horseradish, and black pepper together. On 1 side of each slice of bread, spread about 11⁄2 tsp mayonnaise mixture. Between 2 slices of bread, equally divide beef, tomato, and arugula. Cover each with remaining bread.
