Ingredients

Reduced sodium canned chicken broth

2 cup(s), or WW's Easy soup base

Fresh shiitake mushroom

½ cup(s), stems removed and caps sliced

Ginger root

1 tsp, chopped

Dry ramen noodles

1½ oz

Plain baked tofu

4 oz, or smoked tofu, diced

Uncooked scallion(s)

1 medium, thinly sliced

Low sodium soy sauce

1 tsp, or to taste (optional)

Instructions

  1. Bring broth or soup base and mushrooms to boil in medium saucepan. Reduce heat and simmer until mushrooms are tender, about 5 minutes. Stir in ginger. Add ramen noodles and tofu; simmer until noodles soften, about 3 minutes. Pour into bowl and sprinkle with scallion. Serve with soy sauce, if desired.
  2. Makes 1 serving.
