Radicchio, Goat Cheese and Fig Pizza

We recommend using black mission figs for this recipe. If you can’t find any, swap seedless red grapes in their place.
whole wheat pita(s)8 oz, use four 2 oz pitas
shredded part-skim mozzarella cheese1 cup(s)
crumbled goat cheese½ cup(s)
fresh fig(s)12 medium, thinly sliced (or halved red seedless grapes)
olive oil1 tsp
balsamic vinegar½ Tbsp
Dijon Mustard¼ tsp
table salt¼ tsp
black pepper⅛ tsp, (plus extra for garnish - optional)
uncooked radicchio2 cup(s), thinly sliced
basil2 Tbsp, thinly sliced
- Preheat oven to 500°F.
- Place pita on a large baking sheet. Combine mozzarella and goat cheese in a bowl; evenly spread over pita. Scatter fig slices over top. Bake until pita is golden brown and cheese is melted, about 5 minutes.
- Meanwhile, combine oil, vinegar, mustard, salt and pepper in a mixing bowl. Add radicchio and basil; toss to combine.
- Remove pizzas from oven; evenly divide salad mixture over top. Serve immediately with extra pepper (if using).
