Quick Strawberry-Mango Jam with Mint

Though delicious with vanilla ice cream or plain yogurt, this jam is also wonderful as a turkey sandwich spread, or served over grilled chicken or fish.
strawberries1 ¼ cup(s), raw, fresh, diced , divided
mango(es)1 ¼ cup(s), fresh , diced, divided (or you can use thawed, frozen mango)
fresh mint leaves1 Tbsp, for garnish
- Combine 1 c strawberries, 1 c mango, and honey in a small saucepan; set over medium heat. Cook, stirring frequently, until juices are released and mixture is saucy, 5-10 minutes. Remove from heat; let cool.
- Stir in remaining strawberries and mango; serve sprinkled with mint.
