Delicious with vanilla ice cream or plain yogurt, this jam is also wonderful as a turkey sandwich spread, or served over grilled chicken or fish. It comes together in less than half an hour, so it's a good idea to double or triple the batch to make sure you have some stored in the fridge at all times. To make it, all you need is some fresh strawberries, mangoes, honey, and mint leaves. Feel free to experiment with other fruits, like cranberries, raspberries, or tangerines. The honey, along with the fresh fruit, provide plenty of sweetness, so there's no need for any additional sugar.

Ingredients

strawberries

1¼ cup(s), raw, fresh, diced, divided

mango(es)

1¼ cup(s), fresh , diced, divided (or you can use thawed, frozen mango)

honey

1 tsp

fresh mint leaves

1 Tbsp, for garnish

Instructions

  1. Combine 1 cup strawberries, 1 cup mango, and honey in a small saucepan; set over medium heat. Cook, stirring frequently, until juices are released and mixture is saucy, 5-10 minutes. Remove from heat; let cool.
  2. Stir in remaining strawberries and mango; serve sprinkled with mint.
  3. Per serving: 1/2 cup
