Cooked medium grain brown rice
½ cup(s)
Frozen peas and carrots
¾ cup(s)
Cooked frozen shrimp
3 oz, defrosted if frozen
Egg
1 large egg(s)
Less sodium soy sauce
2 tsp, or to taste
Scallions
½ Tbsp, chopped
Instructions

Heat oil in a nonstick skillet over medium-high heat; add rice and heat through. Add peas, carrots, and shrimp; toss and heat through. Push rice mixture to side of pan and crack egg in middle; scramble egg. Stir egg into rice mixture and sprinkle with soy sauce; garnish with scallions.
