Ingredients

sesame oil

1 tsp

cooked medium grain brown rice

½ cup(s)

frozen peas and carrots

¾ cup(s)

cooked shrimp

3 oz, defrosted if frozen

egg(s)

1 large

low sodium soy sauce

2 tsp, or to taste

uncooked scallion(s)

½ Tbsp, chopped

Instructions

  1. Heat oil in a nonstick skillet over medium-high heat; add rice and heat through. Add peas, carrots, and shrimp; toss and heat through. Push rice mixture to side of pan and crack egg in middle; scramble egg. Stir egg into rice mixture and sprinkle with soy sauce; garnish with scallions.
  2. Makes 1 serving.
