Protein-Packed Grilled Peach Crumble

Juicy summer peaches are perfection on their own, but when you want something closer to dessert, look no further than this peaches-and-cream inspired dish. Crumbly ginger cookies pair perfectly with stone fruit while a vanilla yogurt topping mimics a scoop of ice cream. The 18 grams of protein per serving? Well that's just the cherry on top.


Ingredients
Gingersnap cookie
4 cookie(s), crushed into coarse crumbs
Ground cinnamon
⅛ tsp
Salted butter
½ Tbsp, cut up into bits
Peach
2 medium, ripe, halved and pitted
Plain fat free Greek yogurt
½ cup(s)
Vanilla whey protein powder
1 scoop(s)
Instructions

In a bowl, with fingers, smush together the crushed ginger snaps, butter, and cinnamon until crumbly. Place in the freezer.

Heat a clean grill on medium.

Place the peaches on the hot grill grate, cut sides down. Cover and grill 3 to 5 minutes, until grill marks appear.

Turn peaches over and spoon crumb mixture on top. Cover and grill another 4 to 5 minutes, until peaches begin to soften.

In a medium bowl, stir together the Greek yogurt and protein powder together until smooth. To serve, place peaches on a platter and top with yogurt. Sprinkle more cinnamon on top, if desired.
