Polenta with spinach and cheese
SmartPoints® value per serving
Comfort in a bowl is definitely the best way to describe this hearty dish. Quick-cooking polenta gets extra deliciousness from being whisked into chicken broth instead of water. If you happen to have homemade stock in your freezer, you should use it here. The polenta is also flavored with fresh baby spinach and grated Parmesan cheese. It takes only 15 minutes to put it all together and have dinner on the table. Just be sure not to let it sit, or it will lose its creamy consistency. Get the most enjoyment by eating the polenta with a soup spoon instead of a fork.
