Slice-and-bake precooked polenta makes a wonderful, simple base for upscale, beautiful-looking appetizers that you'll love serving for a crowd. In case you've never shopped for polenta before, the pre-packaged kind is available in a 16-ounce tube in the refrigerator section of your supermarket. Be sure to select a variety labeled fat-free. The canapés also feature slices of fresh mozzarella cheese, basil leaves, cherry tomatoes, and convenient store-bought balsamic glaze. It's all of your favorite flavors of a traditional caprese salad but in convenient bite-sized, delectable treat form. You and all of your guests simply won't be able to resist them.

Fat free ready-to-eat polenta (in tube)

18 oz, sliced into 18 rounds

Fresh mozzarella cheese

8 oz, sliced into 18 rounds

Basil

18 leaf/leaves, left whole or cut into ribbons

Cherry tomatoes

9 medium, halved

Store-bought balsamic glaze

2 Tbsp

Table salt

Instructions

  1. Preheat oven to 400°F. Coat a baking sheet with cooking spray.
  2. Place polenta rounds in a single layer on prepared pan; lightly coat with cooking spray. Bake until golden brown, 12-15 minutes; let cool, 10-15 minutes.
  3. Top each polenta round with 1 slice mozzarella and some basil; top with a cherry tomato half.
  4. Drizzle canapés with balsamic glaze; season to taste.
  5. Serving size: 1 canapé
