Unsalted butter

Uncooked plantain

2 medium, very ripe, peeled and cut on diagonal into 1/4-inch-thick slices

Sugar

1 Tbsp

Fresh lemon juice

1 Tbsp

Almond extract

¼ tsp

Plain fat free Greek yogurt

Instructions

  1. 1 Melt butter in large nonstick skillet over medium heat.
  2. 2 Add plantains and sugar. Cook, turning occasionally, until browned, 7–9 minutes. Remove from heat and stir in lemon juice and almond extract.
  3. 3 Spoon 1/3 cup plain fat-free Greek yogurt into each of 6 bowls; top evenly with plantain mixture.
  4. Serving size: (1/3 cup plantain mixture and 1/3 cup yogurt)
