Plantains with almond and yogurt

uncooked plantain(s)2 medium, very ripe, peeled and cut on diagonal into 1/4-inch-thick slices
fresh lemon juice1 Tbsp
almond extract¼ tsp
plain fat free Greek yogurt2 cup(s)
- 1 Melt butter in large nonstick skillet over medium heat.
- 2 Add plantains and sugar. Cook, turning occasionally, until browned, 7–9 minutes. Remove from heat and stir in lemon juice and almond extract.
- 3 Spoon 1/3 cup plain fat-free Greek yogurt into each of 6 bowls; top evenly with plantain mixture.
- Serving size: (1/3 cup plantain mixture and 1/3 cup yogurt)
