These quick pickled red onions are something that you should have in your fridge at all times. Seriously, you'll be totally surprised by how often you find yourself reaching for them. All you have to do is stir the onion, cider vinegar, honey, hot water, and salt together in a bowl, and let it hang out for half an hour. You'll use them for tacos, stir-fries, breakfast toasts, soups, scrambled eggs, sandwiches—the possibilities are endless. You should also try to save that beautifully pink pickling liquid too and use it for anything that needs a hint of its vinegary brightness.

Ingredients

Cider vinegar

8 Tbsp, (1/2 cup)

Water

¼ cup(s), hot

Honey

2 tsp

Table salt

½ tsp

Red onion

1 medium, thinly sliced

Instructions

  1. Stir together vinegar, hot water, honey, and salt in medium bowl. Add onion and stir until mixed well. Let stand at room temperature, stirring occasionally, about 30 minutes. Drain. Spoon into serving bowl.
  2. Per serving: 2 tablespoons
