Reduced fat cheddar cheese

Preheat the oven to 400°F. Coat a medium nonstick skillet with cooking spray and heat over medium. Add the frozen peppers and onions; cook until soft and most of the liquid evaporates, about 5 minutes, stirring frequently. Add the roast beef; cook until heated through, 1 to 2 minutes.

Arrange half of the cheese evenly over the pita; top evenly with the roast beef mixture and the remaining cheese. Place the pizza directly on the oven rack. Bake until the pita is crisp on the bottom and the cheese is melted, 8 to 10 minutes.
