Cooking the pizza directly on the oven rack crisps the pita for an irresistible crunch. While this recipe makes one serving, it’s easy to scale it up to serve more people.

Ingredients

Cooking spray

4 spray(s)

Frozen pepper strips

¾ cup(s)

Frozen chopped onions

¼ cup(s)

Prepackaged deli sliced roast beef

2 oz, torn into strips

Reduced fat cheddar cheese

cup(s), shredded, or reduced-fat Colby Jack, shredded and divided

Whole wheat pita

1 large

Instructions

  1. Preheat the oven to 400°F. Coat a medium nonstick skillet with cooking spray and heat over medium. Add the frozen peppers and onions; cook until soft and most of the liquid evaporates, about 5 minutes, stirring frequently. Add the roast beef; cook until heated through, 1 to 2 minutes.
  2. Arrange half of the cheese evenly over the pita; top evenly with the roast beef mixture and the remaining cheese. Place the pizza directly on the oven rack. Bake until the pita is crisp on the bottom and the cheese is melted, 8 to 10 minutes.
  3. Serving size: 1 pizza
