A big advantage of having a big batch of roasted vegetable pre-cooked and at the ready, is to be able to pull off easy lunches like this one. It's a breeze to pull together, and absolutely packed with plants (and fiber)—whole-grain farro, white beans, and roasted broccoli, though you could use any roasted vegetable you might have on hand. This recipe uses a terrific time-saving product is available now at markets: Precooked farro. Look for it in pouches near the pouched precooked rice or in the freezer case; it's a fantastic staple to keep on hand.
