It's a breeze to pull together, and absolutely packed with plants (and fiber)—whole-grain farro, white beans, and roasted broccoli, though you could use any roasted vegetable you might have on hand. Look for it in pouches near the pouched precooked rice or in the freezer case; it's a fantastic staple to keep on hand.
