This penne pasta recipe is full of tasty ingredients that you and whomever you're serving this dish to will find simply irresistible: spicy sausage, whole wheat pasta, sautéed vegetables, and Parmesan cheese. You can use the sausage mixture as a sandwich, omelet, or baked potato filling as well. During busy weeknights, streamline the preparation by using frozen bell pepper strips or frozen diced bell pepper strips and onions. Just be sure to buy a high-quality Parmesan cheese for maximum flavor (that goes for basically any recipe that calls for Parmesan). Just a small amount can completely transform your favorite Italian recipes.

Garlic

1 clove(s), minced

Uncooked turkey sausage

1 pound(s), spicy-Italian flavor

Crushed red pepper flakes

¼ tsp

Table salt

¼ tsp

Black pepper

tsp, freshly ground

Dried oregano

tsp, crushed

Canned diced tomatoes

14½ oz

Cooked whole wheat pasta

3 cup(s), penne, kept hot

Grated Parmesan cheese

Instructions

  1. Coat a large nonstick skillet with cooking spray and set pan over medium-high heat. Add green pepper, onion, mushrooms and garlic; cook, stirring frequently, until almost tender, about 7 to 8 minutes.
  2. Remove turkey from casings; add turkey to skillet and brown until no longer pink, stirring occasionally, breaking it up with a wooden spoon as it cooks, about 6 minutes. Add red pepper flakes, salt, black pepper and oregano; stir in tomatoes. Simmer until heated through and to allow flavors to blend, about 5 minutes.
  3. Spoon penne into a deep serving bowl; top with sausage mixture and sprinkle with cheese. Yields about 1 1/2 cups per serving.
