Pear and Watercress Salad

This fruity salad, courtesy of the Weight Watchers U.K. Web site, makes a tasty light lunch.
uncooked long grain brown rice¼ cup(s), long-grain
table salt1 tsp
1% low fat cottage cheese¾ cup(s)
cayenne pepper⅛ tsp
unsweetened canned pears1 ⅔ cup(s), drained and chopped
fresh watercress2 bunch(es), trimmed
fat-free salad dressing4 Tbsp, French recommended
- Cook rice according to package directions with salt but without added fat; allow to cool.
- Mix together cottage cheese, cayenne and pears; stir into rice.
- Arrange watercress on a serving dish and place pear mixture in center; chill for 15 minutes before serving with dressing.
