Pear and Watercress Salad

This fruity salad, courtesy of the WW U.K. Web site, makes a tasty light lunch.
Ingredients

uncooked long grain brown rice

¼ cup(s), long-grain

table salt

1 tsp

1% low fat cottage cheese

¾ cup(s)

cayenne pepper

tsp

unsweetened canned pears

1 cup(s), drained and chopped

fresh watercress

2 bunch(es), trimmed

fat-free salad dressing

4 Tbsp, French recommended

Instructions

  1. Cook rice according to package directions with salt but without added fat; allow to cool.
  2. Mix together cottage cheese, cayenne and pears; stir into rice.
  3. Arrange watercress on a serving dish and place pear mixture in center; chill for 15 minutes before serving with dressing.
