This fruity, gorgeous-looking salad makes for a tasty, light lunch or crowd-pleasing first course. It features hearty brown rice, cottage cheese, cayenne pepper for a touch of heat, and unsweetened canned pears. All you have to do is arrange some fresh watercress on a platter, top with the pear and rice mixture, then serve with your favorite store-bought French dressing (or frankly, whatever flavor of light dressing you like) alongside. Colorful, savory, and sweet, you can assemble the salad ahead of time and let it hang out in the fridge until you're ready to serve.

Ingredients

Uncooked long grain brown rice

¼ cup(s), long-grain

Table salt

1 tsp

1% low fat cottage cheese

¾ cup(s)

Cayenne pepper

Canned pears in juice, drained

1 cup(s), drained and chopped

Fresh watercress

2 bunch(es), trimmed

Fat-free salad dressing

4 Tbsp, French recommended

Instructions

  1. Cook rice according to package directions with salt but without added fat; allow to cool.
  2. Mix together cottage cheese, cayenne and pears; stir into rice.
  3. Arrange watercress on a serving dish and place pear mixture in center; chill for 15 minutes before serving with dressing.
