This peanut butter vanilla quick bread is perfect for both snacks and for breakfast. It’s got a lot of wonderful peanut butter flavor thanks to the peanut powder, and features both brown sugar and powdered sugar for added sweetness, but it’s the triple dose of vanilla that really makes it shine, especially in the simple, delicious icing. The slices are delicious enough all on their own, but they would also be great with a spoonful of raspberry jam or honey spread on top.

Preheat oven to 350°F. Grease a 9 x 5-inch loaf pan with non-stick cooking spray.

In a large bowl, combine the flour, powdered peanut butter, baking powder, salt, sugar, and brown sugar. In a separate bowl, whisk together the vegetable oil, egg, 3 tsp of the vanilla extract, and 1 cup of the milk. Add the wet ingredients to the dry ingredients and mix just until no streaks of flour remain.

Pour batter into the prepared loaf pan and bake until a toothpick inserted into the center comes out with a few moist crumbs, about 50 minutes. Let cool in the pan 15 minutes, then transfer to a wire rack to cool completely.

To make the icing, whisk together the powdered sugar, remaining vanilla extract and water to make a slightly thick but pour able consistency. Drizzle over cooled bread. Let sit 15 minutes before serving.
