Peanut Butter & Co. Vanilla flavored peanut powder
Fat free skim milk
Unpacked light brown sugar
Powdered sugar (confectioner's)
- Preheat oven to 350°F. Grease a 9 x 5-inch loaf pan with non-stick cooking spray.
- In a large bowl, combine the flour, powdered peanut butter, baking powder, salt, sugar, and brown sugar. In a separate bowl, whisk together the vegetable oil, egg, 3 tsp of the vanilla extract, and 1 cup of the milk. Add the wet ingredients to the dry ingredients and mix just until no streaks of flour remain.
- Pour batter into the prepared loaf pan and bake until a toothpick inserted into the center comes out with a few moist crumbs, about 50 minutes. Let cool in the pan 15 minutes, then transfer to a wire rack to cool completely.
- To make the icing, whisk together the powdered sugar, remaining vanilla extract and water to make a slightly thick but pour able consistency. Drizzle over cooled bread. Let sit 15 minutes before serving.
