Peanut Butter Coconut Balls
Uncooked old fashioned rolled oats
Powdered peanut butter
Unsweetened shredded coconut
¾ cup(s), plus more for coating
Dried chia seeds
Plain unsweetened almond milk
½ tsp, optional
- Add oats, Mighty Nut powdered peanut butter, shredded coconut, flax seed, and chia seed to a food processor. Blend until oats are ground up.
- Add maple syrup and almond milk. Blend again until all ingredients are well combined.
- Roll dough into 1-inch balls. It should make about 18 of them.
- Fill a small bowl with shredded coconut. Roll each of the balls in coconut to coat the outside.
