Coconut oil spray

Self-rising flour

Plain fat free Greek yogurt

1 cup(s)

Smooth reduced fat peanut butter

3 tsp

Sugar-free jelly

3 tsp

Egg

Instructions

  1. Preheat oven to 375°F. Coat a baking sheet with coconut oil spray.
  2. In a large bowl, combine the flour and yogurt. Stir together, then knead the dough in the bowl with hands for 3 to 6 minutes, until smooth. If the dough is too sticky, sprinkle with additional 1 tsp flour.
  3. Cut the dough into 6 equal-size pieces. Working with 1 piece at a time, roll and flatten the dough flatten each piece into a 3-inch circle and fill the center with 1/2 tsp each peanut butter and jelly. Pull sides of dough over filing and pinch to seal. Place on the prepared baking sheet, seam side down. Repeat with remaining pieces of dough, peanut butter, and jelly.
  4. Brush the buns with the beaten egg. Bake for 22 to 30 minutes, or until the dough is cooked through and tops are golden. Let stand 5 minutes before serving.
