Peach, tomato, and avocado salad
¼ cup(s), flat-leaf leaves, loosely packed
¼ cup(s), whole fresh leaves, loosely packed
extra virgin olive oil
fresh lime juice
3 medium, ripe, cut into wedges
2 large, cored and cut into wedges
uncooked red onion(s)
½ small, thinly sliced
½ item(s), medium, pitted, peeled and diced
- To make vinaigrette, combine parsley, cilantro, orange juice, oil, lime juice, honey, salt, black pepper, and cayenne in mini food processor and puree.
- Arrange peaches, tomatoes, and onion on platter; sprinkle with avocado. Drizzle with vinaigrette and serve at once.
