The sweet and salty combo of peaches and prosciutto finds its home on a bed of arugula that’s drizzled with a tart balsamic glaze. Peaches not in season? Try fresh figs.

Ingredients

Prosciutto

6 slice(s), cut into quarters

Peach

3 medium, ripe, cut into 24 wedges

Arugula

8 cup(s), baby

Vidalia onion

½ cup(s), chopped, cut into thin slivers

Olive oil

4 tsp

Table salt

¼ tsp

Black pepper

tsp, plus more for garnish (optional)

Store-bought balsamic glaze

Instructions

  1. Wrap 1 piece of prosciutto around each peach wedge. In a large bowl, toss the arugula, onion, oil, salt, and black pepper.
  2. Arrange 2 cups of the salad each on 4 plates. Top each plate with 6 prosciutto-wrapped peaches. Drizzle each plate with 11⁄2 tsp balsamic glaze. Garnish with black pepper, if desired.
  3. Serving size: 1 salad
