Peach, Prosciutto & Arugula Salad with Burrata

This elegant, end-of-summer salad pairs salty prosciutto with sweet peaches and peppery arugula. Creamy burrata cheese adds a delicious finishing touch. If you can’t find burrata, try buffalo mozzarella instead. Swap in nectarines or other stone fruit for the peaches, if you prefer. Or use a mixture of peaches, plums, and nectarines—whatever’s sweet and juicy!
Ingredients
Balsamic vinegar
2 tsp
Olive oil
2 tsp
Kosher salt
⅛ tsp
Black pepper
⅛ tsp, freshly ground
Arugula
3 cup(s), baby-variety
Peach
1 small, ripe but firm, thinly sliced
Burrata cheese
2 oz, cut into large pieces
Lean prosciutto
1 oz, torn into bite-sized pieces
Fresh basil
2 Tbsp, small leaves left whole or larger leaves thinly sliced
Instructions

In a large bowl, vigorously whisk together the vinegar, oil, salt, and pepper. Add the arugula and gently toss to coat. Arrange the arugula on a serving plate and top with the peach slices. Layer the cheese and prosciutto on top. Garnish with basil. Serve immediately.
