Use a high-quality cheese such as Parmigiano-Reggiano. Its strong taste means you only need a little of it to impart a lot of flavor.

Ingredients

Cooking spray

Plum tomato

8 medium, halved lengthwise

Fresh thyme

1 Tbsp, chopped

Extra virgin olive oil

2 tsp

Table salt

½ tsp

Black pepper

½ tsp

Grated Parmigiano-Reggiano

2 Tbsp

Fresh basil

2 Tbsp, chopped

Instructions

  1. Preheat broiler and spray large rimmed baking sheet with cooking spray.
  2. Toss together tomatoes, thyme, oil, salt, and pepper in large bowl. Arrange tomatoes on pan. Broil 6 inches from heat until tomatoes are tender and lightly charred, about 5 minutes on each side. Sprinkle with Parmigiano-Reggiano; broil until cheese melts, about 1 minute.
  3. Transfer tomatoes to platter; sprinkle with basil.
  4. Serving size: 4 tomato halves
