This easy-to-assemble fruit dessert would also be delicious with scoops of passion fruit or mango sorbet instead of the lemon sorbet, or simply use your favorite flavor. Roast the strawberries and nectarines in the oven until they're nicely softened and caramelized, which are a delightful flavor contrast to cold sorbet and fresh mint. It all comes together in just about half and hour and is one impressive-looking yet healthy way to end a dinner party or simple meal at home.

Strawberries

12 medium, hulled

Nectarine

4 item(s), medium, ripe (about 1 pound), halved and pitted

Sugar

1 Tbsp

Sorbet

1 cup(s), lemon variety

Peppermint leaves

6 piece(s), fresh, thinly sliced

Instructions

  1. Preheat the oven to 425°F.
  2. Put the strawberries and nectarine halves, cut side up, on a baking sheet. Sprinkle with the sugar and roast until softened, about 20 minutes.
  3. Place 2 nectarine halves and 3 strawberries on each of 4 plates. Place a 2-tablespoon scoop of sorbet in each nectarine half and sprinkle with the mint. Serve at once. Yields 1 dessert per serving.
