Open-faced egg and cheese croissant sandwich

This quick-and-easy breakfast for one has so many variations. Add a slice of Canadian bacon or some crumbled crisp center-cut bacon, swap in a sunny-side up egg or some leftover frittata, and try different types of cheese such as crumbled feta, soft goat or gorgonzola. We serve it open-face so it takes longer to eat and you can make each bite really count!


Ingredients
Mini plain croissants

Cooked egg
1 egg(s), large, scrambled
Tomato
2 slice(s)
Shredded parmesan cheese
2 Tbsp
Fresh basil
½ Tbsp, fresh
Instructions

Preheat oven to 350°F.

Split open croissant; top with egg and tomato. Sprinkle with cheese; bake until cheese melts and croissant is heated through, 3-5 minutes. Sprinkle with basil; serve.
