These fruity two-bite sweet snacks have a double dose of almond. Freeze-dried strawberries provide concentrated berry essence; be sure to seek them out over soft-chewy dried strawberries.

Unsalted dry roasted almonds

Unsweetened powdered almond butter

Monk fruit sweetener with erythritol

Uncooked old fashioned rolled oats

Instructions

  1. In a mini food processor, pulse the almonds until chopped. Add the strawberries and pulse until the nuts and fruit are finely chopped.
  2. In a medium bowl, stir together the powdered almond butter, monk fruit sweetener, salt, and ½ cup water until smooth. Stir in the strawberry mixture, adding 1 to 2 tbsp more water if the mixture is too thick to combine. Fold in the oats. Divide the mixture into 12 equal portions, rolling each into a ball. Store in the refrigerator for up to 1 week.
  3. Serving size: 1 ball
