TikTok star Nisha Godfrey visited the WeightWatchers test kitchen to whip up a variation on her famous #chickensalad and came up with this Thanksgiving leftover salad featuring another ZeroPoint food fave, turkey breast. Combined with other turkey day leftovers like roasted root veggies, cooked green beans, and corn, this hearty salad might even be more superior to her original recipe.

Ingredients

Baby spinach

Cooked skinless turkey breast

3 oz, thinly sliced

Oven-roasted vegetables (butternut squash, sweet potato, red onion & peppers with olive oil)

½ cup(s), chopped

Cooked green beans

¼ cup(s), cut, sliced

Red bell pepper

¼ cup(s), thinly sliced

Jarred banana peppers

¼ cup(s), sliced

Roasted corn (no oil)

To a serving bowl, add the baby spinach. Top with the turkey, roasted vegetables, green beans, sweet peppers, banana peppers, corn, red onion, and mushrooms. Sprinkle with the cheese and drizzle the vinaigrette on top. Season with black pepper.
