Nicoise salad originated in the city of Nice in France. It's typically made with tuna, green beans, hard-boiled eggs, potatoes, and capers. Our version keeps the spirit of the tang and brightness by utilizing lots of olives, plus fresh lemon zest and juice and tomatoes. It's the perfect recipe if you have some leftover cooked potatoes on hand. Chop them up quickly, toss them with the rest of the ingredients, and you're all set. Pile all the ingredients on a bed of Bibb lettuce leaves to complete the salad.

Ingredients

fresh lemon(s) with peel

1 item(s), large, grated zest and juice

cooked white potato(es)

2 cup(s), diced, at room temperature

fresh tomato(es)

1 large, diced

olive(s)

16 medium, niçoise variety, pitted if desired

table salt

½ tsp

black pepper

¼ tsp

chunk light tuna in water

5 oz, (1 can), drained and flaked

Instructions

  1. Combine lemon zest and juice in serving bowl. Add potatoes, tomato, olives, salt, and pepper and toss until mixed well. Gently stir in tuna.
