Niçoise-Inspired Tuna Salad

Nicoise salad originated in the city of Nice in France. Serve our version on a bed of Bibb lettuce leaves.
fresh lemon(s) with peel1 item(s), large, grated zest and juice
cooked white potato(es)2 cup(s), diced, at room temperature
fresh tomato(es)1 large, diced
olive(s)16 medium, niçoise variety, pitted if desired
table salt½ tsp
black pepper¼ tsp
chunk light tuna in water5 oz, (1 can), drained and flaked
- Combine lemon zest and juice in serving bowl. Add potatoes, tomato, olives, salt, and pepper and toss until mixed well. Gently stir in tuna.
