Nicoise salad originated in the city of Nice in France. Serve our version on a bed of Bibb lettuce leaves.
Ingredients

fresh lemon(s) with peel

1 item(s), large, grated zest and juice

cooked white potato(es)

2 cup(s), diced, at room temperature

fresh tomato(es)

1 large, diced

olive(s)

16 medium, niçoise variety, pitted if desired

table salt

½ tsp

black pepper

¼ tsp

chunk light tuna in water

5 oz, (1 can), drained and flaked

Instructions

  1. Combine lemon zest and juice in serving bowl. Add potatoes, tomato, olives, salt, and pepper and toss until mixed well. Gently stir in tuna.
  2. Per serving: about 1 cup
