Mojo is a sauce that originated in the Canary Islands. Ours has the traditional citrus juice, spices, and garlic, plus beer to flavor and tenderize the flank steak.

Ingredients

Beer

8 fl oz

Orange juice

½ cup(s)

Chili powder

1 Tbsp

Ground cumin

1½ tsp

Dried oregano

1 tsp

Table salt

1 tsp

Cayenne pepper

tsp, or to taste

Uncooked lean flank steak

1 pound(s), trimmed

Corn tortilla

8 tortilla(s), medium, warmed

Cherry tomatoes

1 cup(s), halved

Red onion

¼ cup(s), chopped, diced

Cilantro

¼ cup(s), chopped fresh

Hot pepper sauce

1 tsp, or to taste

Instructions

  1. Stir together beer, orange juice, chili powder, cumin, oregano, salt, and cayenne in 5- or 6-quart slow cooker. Add steak, turning to coat well. Cover and cook until steak is very tender, 4–5 hours on High or 8–9 hours on Low.
  2. Transfer steak to cutting board; cut crosswise into 4 pieces. With two forks, shred steak.
  3. Lay tortillas on work surface. Divide steak evenly among tortillas; top with tomatoes, onion, and cilantro. Serve with hot sauce
