Olive oil

Uncooked onion
1 small, chopped
Celery
1 rib(s), medium, thinly sliced
Water
1½ cup(s)
Orange
1 medium, zested and juiced
Table salt
½ tsp
Black pepper
¼ tsp
Uncooked wild rice blend
1 cup(s)
Dried currants
¼ cup(s)
Instructions

Heat oil in medium saucepan over medium heat. Add onion and celery and cook, stirring, until softened, about 5 minutes. Add water, 1/4 cup of orange juice (save remaining juice for another use), the salt, and pepper and bring to boil. Stir in rice. Reduce heat and simmer, covered, until rice is tender and liquid is absorbed, about 45 minutes, sprinkling currants on top during last 5 minutes of cooking.

Remove saucepan from heat and let stand, covered, 10 minutes. Fluff rice with fork and stir in orange zest. Transfer to serving bowl.
