When zucchini and tomatoes are in season, this simple dish—that takes less than 15 minutes to make—is a fantastic weeknight option. The zucchini is sautéed just until crisp-tender before the tomatoes are added and warmed through. If you’d like the tomatoes to be a bit more charred, add them to the pan when the zucchini starts cooking. You can also cook them a bit longer to reach your desired level of browning. The fresh mint is added at the end to preserve its refreshing, cooling flavor and aroma in this side dish. For a pretty presentation, choose a mix of yellow and red tomatoes.

Uncooked zucchini
3 medium, diced
Garlic
1 clove(s), minced
Cherry tomatoes
1 cup(s), or about 10, halved

Black pepper

Peppermint leaves

In a large nonstick skillet, heat the oil. Sauté zucchini and garlic until zucchini is tender-crisp, 1-2 minutes. Stir in tomatoes, salt, and pepper; sauté until tomatoes are heated through, about 1 minute. Remove from heat; stir in mint.
