These filling little Mediterranean-inspired tidbits are a little like tea sandwiches, and they take just five minutes to make. We’ve used bell pepper hummus here, but you can use whatever flavor that you like. The cucumber, radishes, and alfalfa sprouts add freshness and crunch, but you can use whatever vegetables you like or have on hand. Add in some fresh herbs for another layer of flavor or beans to bulk the sandwiches up for a more filling snack. If you would like to skip peeling the cucumber, substitute an English cucumber which has a thin, edible skin and minimal seeds.

Ingredients

Whole wheat pita

4 small, toasted and halved

Plain hummus

¼ cup(s), three-pepper flavor

Cucumber

¼ medium, cut into 24 slices

Radishes

2 small, cut into 12 slices

Alfalfa sprouts

½ cup(s)

Instructions

  1. Spread each pita half with 2 teaspoons of hummus. Fill each half with 3 cucumber slices, 3 radish slices and 1 tablespoon sprouts.
