Our version of pimento cheese is made with reduced-fat cheddar, given a flavor boost with smoked paprika, and spooned into crispy phyllo shells for the cutest party appetizer vibe.

Ingredients

Mini phyllo shell(s)

Reduced-fat cheddar cheese

¼ cup(s), shredded, sharp variety

Roasted red peppers (packed in water)

2 Tbsp, finely chopped

Light mayonnaise

1 Tbsp

Uncooked scallion(s)

1 Tbsp, finely chopped

Smoked paprika

Instructions

  1. Preheat the oven to 350°F. Arrange the phyllo shells on a small sheet pan. Bake the shells until lightly browned and crisp, about 5 minutes.
  2. Meanwhile, in a small bowl stir together the cheddar, red peppers, mayonnaise, scallions, and smoked paprika. Divide the cheese mixture evenly among the toasted phyllo shells. Serve.
