These sweet little six-ingredient treats are a hand-held take on peanut butter pie, and they couldn’t be easier to make. The filling mixture—a combination of cream cheese, sugar, peanut butter, salt, and whipped topping—is light, fluffy, and full of rich peanut butter flavor. They are sandwiched between two thin chocolate wafers for a wonderful treat that’s ideal for warm weather (or any time of the year). The hardest part will be waiting for them to firm up in the freezer. Stir some mini chocolate chips or peanut butter chips into the peanut butter mixture for an extra dose of decadence.

Low fat cream cheese

2 oz, softened

Powdered sugar (confectioner's)

Creamy peanut butter with omega-3

Light aerosol whipped cream

Instructions

  1. In a medium bowl, using an electric mixer, beat together cream cheese, sugar, peanut butter and salt until smooth. Add whipped topping; beat until just combined.
  2. Spoon a rounded 1 1/2 tablespoons peanut butter filling on top of a wafer cookie; place a second wafer on top. Set on a baking sheet and repeat with remaining ingredients; freeze until firm. Yields 1 ice cream sandwich per serving.
