Ready in just five minutes, this colorful salad can be made all year long. Mesclun is an assortment of mixed baby salad greens. If you can’t find it, you can use spring mix instead. For the grapefruit sections, the precut variety is wonderfully convenient, but you can certainly use fresh if you have time to peel and section the fruit. Just be sure to purchase grapefruit packed in water or its own juice, not a light or heavy syrup, which has added sugar and calories. The rich, tangy feta is a wonderful contrast to the sour, sweet-tart flavor of the grapefruit.

Ingredients

Mixed greens

5 oz, (mesclun)

Canned grapefruit sections packed in water

1 cup(s), such as Del Monte

Feta cheese

¼ cup(s), crumbled

Grapefruit juice

2 Tbsp

White wine vinegar

1 Tbsp

Olive oil

1 tsp, extra-virgin

Honey

1 tsp

Table salt

¼ tsp

Black pepper

tsp, freshly ground

Instructions

  1. Combine first 3 ingredients in a large bowl. Combine grapefruit juice and remaining 5 ingredients in a small bowl; stir well with a whisk. Pour over salad greens; toss gently. Yield: 4 servings (serving size: 1 1⁄2 cups).
