This herb and vegetable-infused cream cheese spread is ideal for sandwiches or wraps, as a topping for crackers, or simply for dipping with crudités or toasted pita wedges. It utilizes some smart pantry staples and the food processor, both of which keep the prep time short and sweet, just 10 minutes. While you can certainly enjoy this immediately, letting it chill for 30 minutes will give the flavors time to mingle, creating a more memorable spread. It’s ideal for parties and potluck gatherings or for an easy snack at home. Feel free to use fresh oregano, if you like. You’ll need 1 tablespoon of chopped oregano to use in place of the dried.

Ingredients

Roasted red peppers (packed in water)

6 oz, drained

Marinated artichokes

6 oz, drained

Dried oregano

1 tsp

Garlic powder

½ tsp

Fresh basil

¼ cup(s), fresh, packed or 1 tsp dried

Fat free cream cheese

½ cup(s), softened

Instructions

  1. In a food processor, combine peppers, artichokes, basil, oregano, and garlic powder; process until blended but still slightly chunky.
  2. Cut cream cheese into small chunks and combine with vegetable mixture until blended. Cover and chill at least 30 minutes. Yields about 1/4 cup per serving.
