This UK recipe relies upon convenient canned and jarred foods to make a colorful, no-fuss, main-course salad with plenty of Mediterranean flavors. Another plus: It’s ready in 20 minutes. Unlike many traditional American tuna salads, this version omits the mayonnaise for a lighter, fresher flavor. Use white kidney beans, also known as cannellini beans, which are a well-loved staple in Mediterranean cuisine. The mix of fresh vegetables—artichoke hearts, roasted red peppers, cucumbers, and cherry tomatoes—provide a tasty mix of flavors and textures as well as a good dose of visual appeal. Use grape or chopped Roma tomatoes in place of the cherry tomatoes, if you like.

Ingredients

Canned tomato puree

Fresh lemon juice

White wine vinegar

Canned tuna packed in water

14 oz

Canned artichoke hearts, drained

6½ oz, rinsed and halved

Roasted red peppers (packed in water)

4 oz, water-packed, sliced

Cucumber

¼ cup(s), chopped

Cherry tomatoes

12 medium, halved

Fresh parsley

2 Tbsp, fresh, chopped

Instructions

  1. Mix together tomato puree, lemon juice, and vinegar in a large salad bowl; season to taste with salt and pepper.
  2. Add remaining ingredients to bowl and toss to mix. Cover and chill until ready to serve.
