This refreshingly fruity frozen smoothie gets a double dose of mango flavor thanks to fresh mango as well as mango nectar, which is made from a combination of mango juice and pureed fruit. Mango nectar has a thicker texture and isn’t clear like typical fruit juice, and it can usually be found in cans on the international aisle of most supermarkets or Latin markets. This smoothie uses a sweetened variety of lime juice, but you can use regular lime juice. If you’d like it to be sweeter, just add a little more sugar. This smoothie is equally delicious made with fresh peaches and peach nectar.

Ingredients

Ice cube

1 cup(s)

Mango

1 small, cubed (about 1 cup)

Flavored soy milk

1 cup(s), vanilla, well chilled

Mango nectar

¾ cup(s)

Sugar

1 Tbsp

Fresh lime juice

1 Tbsp, sweetened variety, such as Rose’s Lime

Instructions

  1. Crush the ice cubes in a blender (or place them in a zip-close freezer bag, crush them with back of heavy skillet, and place in the blender). Add the mango, soy drink, nectar, sugar, and lime juice; puree until smooth. Yields 1 cup per serving.
